Biriyani masala
Here's the recipe for homemade Veg Biryani Masala:
Homemade Veg Biryani Masala Recipe
*Ingredients:*
*Whole Spices:*
- 2 tbsp cumin seeds (jeera)
- 2 tbsp coriander seeds (dhania)
- 1 tbsp fennel seeds (saunf)
- 2 tsp caraway seeds (shahi jeera)
- 2 tsp black peppercorns (kali mirch)
- 2 tsp cloves (laung)
- 2 tsp green cardamom (hari elaichi)
- 2 black cardamoms (badi elaichi)
- 1 tsp star anise (chakr phool)
- 1 tsp mace (javitri)
- 1 small piece of nutmeg (jaiphal)
- 3-4 bay leaves (tej patta)
- 2-inch cinnamon stick (dalchini)
- 1-2 dried red chilies
*Powdered Spices:*
- 2 tsp turmeric powder (haldi)
- 1 tbsp Kashmiri red chili powder
- 1 tsp dry ginger powder (saunth)
- 1 tbsp dry mango powder (amchur) (optional)
*Instructions:*
1. *Dry Roast the Whole Spices*: Heat a pan on low flame. Add all the whole spices and dry roast for 2-3 minutes until aromatic. Let them cool completely.
2. *Grind into Powder*: Transfer the roasted spices to a grinder. Add the powdered spices (turmeric, chili powder, ginger powder, and amchur). Grind into a fine or coarse powder as per preference.
3. *Store Properly*: Store in an airtight container in a cool, dry place. Stays fresh for up to 3 months
